At KOVAL Distillery, a seamless fusion of tradition and innovation takes you on an immersive exploration of craft spirit mastery. Founded in 2008 by the visionary husband-and-wife team, Dr. Robert Birnecker and Dr. Sonat Birnecker Hart, this Chicago trailblazer uses a precise grain-to-bottle method and their signature "heart cut" technique to create exceptional spirits from organic grains, steeped in rich heritage.
The tours offer an engaging, behind-the-scenes experience, showcasing the dedication to distilling methods that have earned global recognition and numerous awards. Visitors will learn about the unique processes and flavor profiles that define KOVAL’s acclaimed spirits, making each tour a celebration of innovation and legacy. The tour concludes with a tasting of 3 KOVAL spirits. Please note, the tour is 45 minutes long and standing-only (seating available upon request).
